Overview
Sous Chef We are recruiting for a Sous Chef to support and elevate food and beverage operations at the Valhalla Hotel & Conference Centre in Thunder Bay, Ontario. The Sous Chef supports the Executive Chef and Executive Sous Chef in their absence, trains staff, leads the kitchen team, and leads daily kitchen operations. They collaborate with the team to execute the hotel’s culinary vision and ensure high-quality food, presentation, and guest satisfaction.
The role is hands-on, requires familiarity with all kitchen equipment, and involves stepping in on tasks as needed while leading and guiding the team.

Key Responsibilities
- Provide supervision, coaching, and guidance to team members; lead by example in competence, organization, knowledge, and professionalism
- Prepare individual dishes and full-course meals; ensure food quality, flavour, and plating
- Maintain knowledge of specialized cooking equipment and food safety practices
- Ensure timely communication of issues to the Chef; collaborate with the Executive Chef for menus, specials, banquets, and events
- Assist in daily operations, inventory management, ordering, costing, waste control, and ensuring food safety standards
- Exercise food cost controls and minimize waste; lead prep and production for all items
- Ensure prep levels, fridge organization, stock rotation, storeroom cleanliness, and dish area organization
- Monitor production standards and product quality; ensure brand standards are met
- Train and develop staff; participate in all aspects of food preparation and plating
- Handle additional duties as assigned
What We Are Looking For
- Passionate, energetic personality with a team-focused attitude
- Strong desire to exceed guest expectations; attention to detail
- Ability to follow through on daily tasks; promote teamwork and a positive work environment
- Culinary experience including short-order experience; hotel environment preferred
- Diploma or completion of post-secondary culinary program preferred
- Current Food Safe Certification
- Proven time management skills and ability to work under pressure; thrives in a fast-paced environment
- Physical ability to perform tasks (lifting up to 50 lbs as applicable) and stand/walk for prolonged periods
- Availability to work days, evenings, weekends, and holidays as required
- Must be legally authorized to work in Canada
