Job Summary

Fresh Serve is seeking a skilled, disciplined, and highly hygienic Cook to work in the MeCure Staff Canteen Kitchen. The ideal candidate must be passionate about preparing delicious, nutritious, and well-presented meals while maintaining the highest standards of food safety, cleanliness, and professionalism.

The candidate should be experienced in preparing a wide range of Nigerian and continental meals, snacks, rice dishes, sauces, pastries, and traditional cuisines in a fast-paced kitchen environment.

Key Responsibilities

Food Preparation & Cooking

  • Prepare and cook a variety of meals daily according to approved recipes and standards.

  • Cook different rice dishes, including:

    • Jollof rice

    • Fried rice

    • Coconut rice

    • Native rice

    • Chinese rice

    • Ofada rice

    • Curry rice and other specialty rice meals

  • Prepare soups, sauces, stews, and traditional Nigerian dishes.

  • Make quality moi-moi, beans dishes, swallow meals, and local delicacies.

  • Prepare continental meals and pasta dishes.

  • Produce snacks and pastries such as:

    • Meat pies

    • Chicken pies

    • Doughnuts

    • Puff-puff

    • Sausage rolls

    • Buns

    • Sandwiches and other baked snacks

  • Ensure meals are tasty, attractive, nutritious, and consistently prepared.

Food Safety & Hygiene Responsibilities

  • Maintain strict food safety and hygiene standards always.

  • Ensure cleanliness of cooking areas, utensils, equipment, and storage areas.

  • Practice proper food handling, storage, and temperature control procedures.

  • Prevent food contamination and wastage.

  • Ensure personal hygiene standards are upheld daily.

  • Comply with all health and safety regulations guiding food preparation and canteen operations.

Kitchen Operations

  • Assist in meal planning and daily kitchen production schedules.

  • Monitor food portions and minimize waste.

  • Properly manage kitchen inventory and report shortages promptly.

  • Work efficiently under pressure and meet meal service timelines.

  • Support teamwork and maintain professionalism within the kitchen.

Food Preparation & Presentation

  • Ensure meals are attractively plated and professionally presented before serving.
  • Demonstrate good food plating and garnishing skills for both local and continental meals.
  • Maintain consistency in portioning, appearance, and presentation quality.

Requirements

  • Proven experience as a cook in a restaurant, canteen, hotel, or food service environment.

  • Strong knowledge of Nigerian and continental cuisine.

  • Ability to prepare large quantity meals efficiently.

  • Good understanding of food safety and hygiene practices.

  • Ability to make a wide variety of snacks and pastries.

  • Good taste, creativity, and food presentation skills.

  • Ability to work with little supervision.

  • Physically fit and able to stand for long periods.

  • Good attitude, discipline, honesty, and teamwork spirit.

Preferred Qualifications

  • Catering or culinary training certification is an added advantage.

  • Previous experience in a corporate or hospital kitchen environment is an advantage.

  • Knowledge of healthy meal preparation is desirable.
