Chocolatier Jobs in London, England, United Kingdom at Win-Win

Title: Chocolatier

Company: Win-Win

Location: London, England, United Kingdom

THE ROLE

As our Chocolatier/New Product Development, you’ll be a core part of the chocolate team, working hand-in-hand with the Head of Chocolate to bring our cocoa-free products to life. This is a genuinely hands-on role: split between production — making samples, fulfilling customer briefs, keeping the lab running smoothly — and development, helping to test, refine and scale new recipes and formats.

You’ll need a sharp palate, a methodical mindset and a real passion for getting texture, flavour and functionality right. You’ll take pride in your work and your records, maintain the highest food safety standards, and thrive in a collaborative, fast-paced environment.

WHAT YOU’LL DO

Production & Samples

  • Prepare and produce customer samples, sales samples and bespoke requests to brief and on time.
  • Support day-to-day production planning and scheduling in collaboration with the Head of Chocolate.
  • Maintain quality, consistency and efficiency across production runs.
  • Manage stock levels, ingredient prep and lab organisation to keep production flowing.

Recipe Development & R&D

  • Develop and test new cocoa-free chocolate recipes, with a focus on flavour, texture and product objectives.
  • Work closely with the Head of Chocolate on trials of new substrates, formats and formulations.
  • Support technology transfer from lab-scale trials to pilot and production runs.
  • Contribute to the continuous improvement of existing products, incorporating feedback from customers and internal teams.

Quality, Safety & Documentation

  • Maintain rigorous food hygiene and safety standards, including full HACCP compliance.
  • Keep accurate batch records, development notes and QMS documentation.
  • Support audit readiness and internal quality processes.

Cross-Functional Collaboration

  • Work closely with the Operations team to coordinate timelines, stock and bespoke production requests.
  • Support the Commercial team by preparing for tastings, demos and customer-facing events.
  • Gather and feed back customer insights to inform recipe and product improvements.

WHAT YOU’LL BRING

  • A background in pastry or chocolate — professional experience or formal training strongly preferred.
  • Strong intuition for texture, flavour and technique, with the ability to translate that into repeatable, scalable recipes.
  • Hands-on experience in a production or development kitchen environment.
  • A methodical, detail-oriented approach to problem-solving and troubleshooting.
  • Solid food safety knowledge; HACCP experience is an advantage.
  • Clear, accurate record-keeping habits and a collaborative, team-first working style.
  • Genuine curiosity about innovative ingredients and sustainable food systems.

Chocolate experience is a strong advantage, but not a requirement — the right attitude, curiosity and willingness to learn matter most.

If you don’t meet every single point but have the relevant skills and motivation, we’d still like to hear from you.

SALARY & BENEFITS

  • Competitive salary, commensurate with experience.
  • Professional development and the opportunity to grow with a rapidly scaling company.
  • A collaborative, inclusive workplace that values craft, creativity and different perspectives.
  • Vibrant office in East London with barista-level coffee and great snacks.
  • The chance to contribute to a more sustainable and ethical food system.
