Summary of Role:
Reporting to the Director of Operations, you will be responsible for leading the Food & Beverage function to achieve both short- and long-term business objectives. You will oversee all F&B activities, driving revenue growth, profitability and operational excellence through effective cost control, strategic initiatives, and a strong focus on delivering exceptional guest experiences.
You will play a key role in bringing the resort’s vision and values to life, inspiring and motivating your team to consistently deliver five-star service standards and exceed guest expectations.
Key Responsibilities:
- To oversee all operational aspects of the F&B department.
- To conduct Training sessions throughout the F&B Operation.
- To lead and develop F&B HOD’s and Supervisors.
- Duty Manager Shifts
- To be involved with the planning and leading of the staff and product of the F&B Department
- To Control and monitor Beverage Stock takes throughout The Resort ensuring that the budgeted BCOS is adhered to each month
- To monitor and control the procedures and systems with regards to all aspects of beverage control
- To maintain a full understanding of the Financial Business of the F&B Department ensuring profitability
- To take control of the Weekly Function Sheet Meeting
- To liaise with the Executive Sous Chef and Executive Head Chef daily
- To ensure that all outlets are correctly manned and always staffed to the budgets payroll, and to ensure that F&B Payroll is controlled
- To deputize for the Director of F&B in his absence and assist him where the needs of the business depict.
Food & Beverage Responsibilities in point format:
- To develop a yearly plan for the department and agree with the Director of Food & Beverage
- To monitor the department’s actual performance as compared to planned performance and take any corrective action as required
- To implement up selling programmes
- To maintain a purchasing system of Food & Beverage and supplies which conforms to the Resorts guidelines
- To maximise staff productivity
- To establish Departmental Operating Procedures for preparation, presentation and service of Food and Beverage.
- To liaise and communicate with all Departments daily to ensure the smooth operation of service.
- To be present and overseeing service at peak times
- To work with the Restaurant/ Bar Manager and Head Chef in organising the compilation of food menus and wine/drinks list
- To work with the Events Manager in the planning of Marketing &Events service.
- To prepare Hygiene and Health & Safety checklists and ensure their use
- To always adhere to hotel cost control/ cash handling procedures
- To always adhere to all statutory obligations for departmental employees
- To ensure that all Food & Beverage areas are kept clean and uncluttered in accordance with Resort policy
Training:
- To ensure training plan for department is completed
- To ensure training is carried out and documented to HR
- To personally carry out and record training as required
- To ensure departmental trainer is in place
- To ensure staff are rostered for training activities

Miscellaneous:
- Maintain high level of Standards, Personal Hygiene, Uniform, Appearance and the conduct of staff in your department
- You are required to attend all meetings and training courses requested by GM or Director of Operations
- Accept flexible working hours necessary for uninterrupted service to the hotel guests
- To continuously seek to improve your departments, efficient operation and standards
- To be fully conversant with the sales function within your departments and to take every opportunity to optimise sales
- To carry out regular departmental meetings.
