Job Description
The Executive Chef – Pastry, Bakery & Cold Kitchen is responsible for leading and managing the pastry, bakery, and cold kitchen operations at Earth Roastery. This includes developing innovative and high-quality products, supervising the kitchen team, ensuring consistency in preparation and presentation, maintaining food safety standards, and controlling costs while supporting the overall culinary vision of the brand.
Key Responsibilities
1. Menu Planning and Development
- Create new pastry, bakery, and cold kitchen items that align with the Earth Roastery brand.
- Develop seasonal, promotional, and specialty menus.
- Ensure all recipes meet quality, presentation, and consistency standards.
- Design products that complement Earth Roastery’s coffee offerings.
2. Recipe Standardization
- Develop, document, and update standardized recipes for all pastry, bakery, and cold kitchen products.
- Train team members to follow recipes accurately.
- Ensure consistency in taste, texture, portioning, and presentation.
3. Team Leadership
- Lead and supervise pastry, bakery, and cold kitchen staff.
- Assign daily duties and monitor performance.
- Train new employees and provide ongoing coaching and development.
- Foster a positive, productive, and professional work environment.
4. Quality Control
- Monitor the quality, freshness, taste, and appearance of all products.
- Ensure all items meet Earth Roastery’s standards before service or display.
- Identify and resolve quality issues promptly.
- Conduct regular product evaluations and improvements.
5. Inventory and Ordering
- Monitor stock levels of ingredients, packaging, and kitchen supplies.
- Coordinate ordering and receiving of products.
- Ensure proper storage and stock rotation procedures.
- Minimize waste through effective planning and inventory control.
6. Kitchen Organization and Food Safety
- Maintain a clean, organized, and efficient kitchen environment.
- Ensure compliance with food safety, hygiene, HACCP, and sanitation standards.
- Monitor equipment maintenance and report repair needs.
- Implement best practices for safe food handling and storage.
7. Cost Control
- Manage food costs and labor efficiency within budget targets.
- Control portion sizes and ingredient usage.
- Analyze product costs and recommend improvements.
- Reduce waste while maintaining product quality.
8. Collaboration
- Work closely with the R&D Department, baristas, and management team.
- Support new product development and menu launches.
- Assist with food presentations, promotions, and special events.
- Collaborate on pairing recommendations between food and beverages.
9. Innovation and Trends
- Stay updated on industry trends, techniques, and market developments in pastry, bakery, and cold kitchen operations.
- Introduce innovative products and concepts to enhance customer experience.
- Participate in training programs, workshops, and industry events when required.
10. Customer Focus
- Review and respond to customer feedback regarding food quality and presentation.
- Adjust recipes and offerings based on customer preferences and business needs.
- Ensure a consistently high standard of guest satisfaction.
Qualifications & Skills
- Proven experience in a similar role (5+ years preferred).
- Strong knowledge of pastry, bakery, and cold kitchen production techniques.
- Experience with artisan baking, desserts, sandwiches, salads, and cold food preparation.
- Creative mindset with strong attention to detail and presentation.
- Excellent leadership, communication, and time management skills.
- Strong understanding of food safety, hygiene, HACCP, and sanitation regulations.
- Ability to work under pressure in a fast-paced environment.
- Flexibility to work weekends, holidays, and special events.
