We're not looking for someone to run hotel restaurants.
We're looking for someone to build some of Tokyo's most talked-about hospitality destinations.

About the Opportunity
This is unlike a traditional Director of Food & Beverage role.
Our operational foundations are already strong. What we're looking for now is a commercial leader—someone who understands that great venues don't simply serve food and drinks; they build communities, create cultural moments, and become destinations in their own right.
You'll be responsible for driving outside visitation, increasing market share, and ensuring every venue within 1 Hotel Tokyo has its own identity, following and reason to visit.
Whether it's launching the city's next must-attend guest chef collaboration, partnering with premium brands, creating seasonal activations, curating live entertainment, or building relationships with Tokyo's tastemakers and media, you'll constantly be asking one question:
"Why would a local choose to come here tonight?"
You'll work closely with Sales, Marketing and Revenue to maximise commercial performance while building experiences that strengthen the 1 Hotels brand and position our venues amongst Tokyo's most desirable places to eat, drink and gather.
What You'll Do
- Develop and execute a commercially driven Food & Beverage strategy focused on growing local patronage and revenue.
- Position our restaurants, bars and café as standalone lifestyle destinations—not simply hotel outlets.
- Build meaningful partnerships with local chefs, artists, designers, brands, wellness leaders and cultural influencers.
- Create a year-round calendar of activations, events and experiences that keep our venues relevant and talked about.
- Work closely with Marketing to deliver compelling campaigns, storytelling and social-first content that drives awareness and visitation.
- Lead pricing, promotions and programming with a commercial mindset, balancing creativity with profitability.
- Inspire and develop a passionate team while maintaining a visible leadership presence throughout the operation.
About You
You're a marketer as much as you are an operator.
You understand consumer behaviour, lifestyle brands and how to create venues that people actively seek out.
You bring:
- Deep connections within Tokyo's restaurant, bar, hospitality, media and creative communities.
- A proven track record of building destination dining concepts with strong local followings.
- Exceptional commercial acumen and an ability to translate creativity into measurable revenue growth.
- Experience delivering partnerships, collaborations, pop-ups, events and activations that generate genuine market excitement.
- A passion for storytelling, branding and creating memorable guest experiences.
- A collaborative leadership style that inspires teams while remaining highly visible within the business.
- The agility to thrive in a fast-paced, evolving luxury lifestyle environment.
- Fluency in both Japanese and English (essential).
