Main Objectives
To manage the process and delivery of an airline customers food program by delivering a consistent and remarkable menu style, standards, specifications, and development process. This includes overseeing all documentation of requirements and budgets through internal and external teams, ensuring compliance with, and tracking of, timelines and deliverables.
Main Duties
- Maintain, update and communicate menu planning structure, timelines and detailed requirements for all airline meal services ensuring consistency of the airline’s food offer, ensuring compliance with development and delivery timescales and budgets.
- Translates the airline customers food vision, style and standards into actionable plans, documents, procedures and processes to ensure delivery of a coherent and understandable style, characteristics, profile and language across their fleet and routes, with consistent, on-time delivery.
- Tracks product quality performance worldwide regarding food delivery, providing detailed reports to colleagues and senior management to build and drive delivery of improved consistency of airlines food proposition.
- Drive the development of all sourcing opportunities across all markets while actively monitoring cost impacts and seeking brand alliance opportunities in coordination with airline teams to improve product consistency, enhance guest offering and reduce costs.
- Provides culinary input to station catering supplier selection upon airline request, processes other supplier selection recommendations, delivering robust analysis of caterer and supplier capability and commercial rational to support clear recommendations that enable good business decisions.
- Builds and delivers robust plans to maximize product development and new delivery opportunities to improve product quality and consistency.
- Works with all key airline customers and internal Procurement & Logistics to develop and deliver a food category and commodity plan, as well as introducing a food supplier plan that leverages tactical and strategic supplier relationships to deliver tangible customer benefit and reduced cost.
- Ensures close and robust liaison with Delivery and Commercial teams within BAS Catering and with Procurement & Logistics, and suppliers to ensure all stakeholder needs are effectively managed and ensuring all communication is clear and unambiguous.
- Collates competitor analysis of hospitality trends in Food & Beverage and reports quarterly to senior management on key changes and potential vision development requirements ensuring BAS Catering remains at forefront of culinary development and trends.
- Comply with Company's and airport authorities’ health, safety & security requirements.
- Carries out other similar or related duties as directed by the management.
Minimum Requirements
Education:
- A minimum of bachelor’s degree in hospitality and/or Hotel Management, and/or any related field.
- An internationally recognized degree in Culinary Sciences.
Experience:
- A minimum of 8 years’ experience in an airline catering or inflight catering and/or first-class hotel.
Other Essential Requirements:
- Excellent communication and organizational skills required.
- Thorough understanding of Catering policies and procedures, including HACCP.
- Ability to work well with others within a culturally diverse environment.
- Ability to work a flexible schedule.
- Spoken and Written English (IELTS Level 2).
