Jaipur Modern is a heritage all-day kitchen in C-Scheme, Jaipur — featured in Condé Nast Traveller, known for design-led hospitality and food with a strong point of view. We're looking for a chef who can own our in-house speciality production, drive recipe development across bakery and savoury, and grow into the creative engine of our kitchen.
What you'll own
- Seasonal menu development — researching, testing, and proposing new dishes each season, rooted in Rajasthan's produce calendar and JM's food identity
- Recipe development across savoury and bakery — dips, spreads, crackers, breads, and retail-ready speciality items
- Improving kitchen systems — SOPs, prep workflows, consistency documentation, and recipe cards that make the kitchen more self-sufficient
- In-house production of speciality items currently sourced externally
- Catering support — menu ideation, prep, and execution for private events and off-site bookings
- Maintaining a live recipe library: costed, documented, and kitchen-executable
What you bring
- A professional culinary degree from a recognised institution
- Minimum 5 years of kitchen experience including time in high-volume or large-format kitchens
- Current or recent CDP-level experience
- Equal comfort in savoury and bakery — this is not a single-track role
- A genuine creative instinct backed by technical discipline
- The rigour to document what you create, not just cook it
How this role sits in the kitchen
You report to and work alongside our Senior Chef, who owns kitchen operations and the line. Your lane is distinct — recipe development, speciality production, and systems improvement. You are not here to run the line. You are here to build what goes on it and make the kitchen behind it sharper.
All new dishes go through a defined process: concept → cost → kitchen trial → Director sign-off → launch. You own the first three steps.
